Pizza, Pasta and Pecorino!

Pizza, Pasta and Pecorino!

Located in Panzano in Chianti, Tenuta Casenuove covers 105 hectares spread over a succession of hills and valleys. There are 28 hectares under vine (in organic conversion), the rest of the estate largely laid to forest and olive groves. Planted high above the Pesa river at altitudes up to 490 metres, it is here that winery director Alessandro Fonseca, cellar master Maria Sole Zoli and young winemaker Cosimo Casini are crafting some of the most exciting new wines in Chianti Classico. Meticulous attention to detail through every stage of the vineyard and cellar shines through in their wines.

Description

Equilibrium and elegance combine in this fresh, compelling take on a Tuscan classic. Vinification in concrete tanks, extended maceration followed by 12 months in a mix of large Slavonian oak casks and concrete tanks. Once in the bottle, the wine is left to mature for 6 months. Ripe tannins and a savoury finish make it an ideal accompaniment for all things tomato based, as well as all things beginning with P it would seem - Pizza, Pasta and Pecorino!

How does it taste

A grown-up wine - fresh acidity, black fruits, ripe tannins and a touch of savouriness.
