The Château has been in the hands of the Couderc family for over one hundred years. Their thirty hectares of vineyards, though not situated on the prime slope below the town of St Emilion, avoid the sandy valley floor and lie on the other side of the valley facing the town. This Moulin de Mallet owes its quality to the painstaking work undertaken in the vineyard in recent years (short pruning, managed grass cover, restricted yields, green harvesting,integrated pest control), as well as the vinification techniques aimed at fostering extraction of the fruit and colour without too much tannin.

Let it breathe

This lovely Claret just needs to have a couple of glasses poured out and left aside with the rest in the bottle also to get some air to it. This will supple up the wine and shave off any harsh edges. Room temperature for reds is 17°-21°c. My first bottle tasted a little sharp on opening but gradually bloomed over 2 hours to it's peak.

Let it breathe

On first sip after decorking I knew this wine would blossom further if a couple of glasses were poured and left to breathe including wine in bottle. While dinner was cooking I tasted as I went along and now find that after two and a half hours after opening this wine is as supple and giving as it can be. It is very tasty an inky plum weight, just kidding it is just very tasty, let it breathe and bloom.
