Ingredients:
- 50ml Copper House Dry Gin
- 1 bottle Indian Tonic Water
- 15ml Spiced Sugar Syrup
- Fresh Orange and Rosemary to garnish
Method:
- To a highball glass add ice
- 15ml sugar syrup and 50ml Copper House Dry Gin
- Top with Indian tonic water
- Garnish with a fresh orange week and a sprig of rosemary
To make the Spiced syrup:
- 1 cup of muscovado sugar
- 1 cup of water
- 1 Orange Peel
- 1-3 cinnamon sticks, broken in half
- 3 Cardamon pods lightly smashed
Combine all ingredients in a small saucepan and set the heat to medium. Stir frequently until all of the sugar has dissolved, then bring the liquid to a boil.
Once boiling, reduce the heat and simmer the mixture for 5-10 minutes, or until flavourful. Remove the pan from the heat and allow the liquid to cool completely before removing the solids. Store the spiced simple syrup in a closed container (like a glass bottle) in the refrigerator for up to 2 weeks.
