Perfect for chilly evenings and festive gatherings.

Ingredients:

  • 50ml Copper House Dry Gin
  • 1 bottle Indian Tonic Water
  • 15ml Spiced Sugar Syrup
  • Fresh Orange and Rosemary to garnish

Method:

  • To a highball glass add ice
  • 15ml sugar syrup and 50ml Copper House Dry Gin
  • Top with Indian tonic water
  • Garnish with a fresh orange week and a sprig of rosemary

To make the Spiced syrup:

  • 1 cup of muscovado sugar
  • 1 cup of water
  • 1 Orange Peel
  • 1-3 cinnamon sticks, broken in half
  • 3 Cardamon pods lightly smashed

Combine all ingredients in a small saucepan and set the heat to medium. Stir frequently until all of the sugar has dissolved, then bring the liquid to a boil.
Once boiling, reduce the heat and simmer the mixture for 5-10 minutes, or until flavourful.
Remove the pan from the heat and allow the liquid to cool completely before removing the solids. Store the spiced simple syrup in a closed container (like a glass bottle) in the refrigerator for up to 2 weeks.
